This is a Belshaw Econo Proofer Donut Cabinet Proofer model EP18/24 in excellent condition. This is the most flexible method of proofing donuts, cinnamon rolls, and all yeast-raised goods. This particular model is a robust, mobile, go-anywhere, use-anywhere proofer that offers top performance alongside both open kettle fryers and tabletop automatic fryers. Model has racks for 17 shelves to accomodate donuts, or for 12 shelves for cinnamon rolls or other bulkier products. It has a capacity of 68 dozen large donuts per hour. Six plexiglass doors enable the operator to inspect product condition on any shelf. Screens or pans are removed as they are ready. The proofer can be positioned right alongside the fryer for convenient loading or unloading. Cleaning is easy due to removable shelves, racks and doors and a slide in-and out electrical compartment. All components are heavy duty for commercial use. This unit requires no plumbing, hard wiring or special installation. It uses shelves 23" by 25" and holds 17 screens or pans. Blower system for evenly circulating warm humid air. Thermostat-controlled dry heat and wet heat. Heavy duty stainless steel and aluminum construction. 115 volts, 60 Hz, 1 phase.
