Some sheets will have grey sap water stains on one surface only. One side is often rougher than the other due to the rotary peeling process. Some sheets , like all veneers, may initially have some curl or warping.
You willn t be able to wait to put it to use. Once it has a clear coat on, the figure truly pops out. Fine Woodworking recommends applying a coat of stain to figured woods, then sanding most of it out so it is absorbed only in the most dense areas which helps pop the curl (in curly maple) or enhance Birds eyes. This works well and worth the effort.
